New Year’s Day Caviar with Black-Eyed Peas

Happy New Year! In the Southeast, black-eyed peas are eaten on New Year’s day for luck and prosperity. May I add that they are nutritious and delicious when consumed with tortilla chips!

Ingredients

15 ounces black-eyed peas, canned, drained and rinsed
15 ounces white corn, drained
2 tomatoes, chopped
½ red onion, diced
2 tablespoons cilantro, finely chopped
1 avocado, diced
1 jalapeno, finely chopped (optional)
½ red bell pepper, diced
1 tablespoon lime juice
1 teaspoon salt
1 clove garlic, minced (or substitute 1 teaspoon garlic powder)
Optional: one mango, chopped

Directions

Combine all ingredients.
Refrigerate at least one hour before serving if possible.
Serve with corn tortilla chips as a dip.
Also great as a salad on a bed of lettuce or spoon over chicken or fish.
